Paper cut out Valentine's day card

Ash and Ashley's Enchilada Casserole

- 1/2 Green Bell Pepper
- 1/2 Red Bell Pepper
- 1 Yellow Onion
- 1 package of Lean/Extra Lean Hamburger
- 5 large whole wheat flour Tortillas
- Taco Seasoning/Chili Powder to taste
- 1/2 cup Salsa
- 1/2 cup Water
- 1 can Enchilada Sauce
- 1/2 cup Cheddar Cheese
Chop 1/2 of a Red and Green Pepper and 1 Yellow Onion. Add to a frying pan with Hamburger.
Cut up the Tortillas into 1inch pieces (I use a pizza cutter to do this). Set aside.
When hamburger is brown add Taco seasoning, 1/2 Cup Salsa, 1/2 Cup Water, and 1 Can of Enchilada Sauce
In a microwavable casserole dish layer 1/2 of the tortillas, 1/2 the hamburger mixture, 1/4 cup of grated cheese, remaining tortillas, hamburger mixture, and another 1/4 cup grated cheese.
Offset the cover of the casserole dish and microwave for 3-4 minutes.
I like to serve with steamed green beans and basmati rice.
